3/4 c. cooking oil or butter
1 c. plain flour
1 large onion, chopped
1/2 bell pepper, chopped
1 rib celery, chopped
2 cloves garlic, minced (optional)
1 large chicken, cut up into serving pieces
1 lb. andouille or heavily smoked sausage, sliced
Cajun seasoned salt
3 to 4 stalks green onions, chopped
2 sprigs parsley, finely chopped
1 1/2 qt. hot water or chicken broth
