Bou Stew - cooking recipe
Ingredients

4 Tbsp. olive oil
2 lb. caribou, in 1-inch cubes (chuck is good)
1 c. flour
1 pt. fresh pearl onions, peeled
3 cloves garlic, minced
1 1/2 lb. fresh tomatoes, peeled and seeded
1 Tbsp. fresh thyme, minced (1 tsp. dried thyme)
1 Tbsp. oregano
1 tsp. rosemary
1 bay leaf
1 tsp. ground cumin
1 1/2 c. beef broth (canned)
1 c. dry red wine
