Carrot Cake - cooking recipe

Ingredients
    2 lb. carrots
    1 c. flour
    1 c. sugar
    2 eggs or egg substitute
    1/4 c. cinnamon or more (optional)
Preparation
    Cut carrots and place in large pot with about 1-inch of water. Cook until done.
    Mash in water they are cooked in.
    Add flour, sugar, eggs and cinnamon.
    Bake in 10 x 10-inch baking dish for about 30 to 35 minutes or until slightly brown on top.
    Bake at 400\u00b0.
