Sweet And Sour Chicken - cooking recipe

Ingredients
    3/4 lb. skinless cubed chicken breast (approximately 3 breasts)
    1/2 green pepper, diced
    1 1/2 Tbsp. cornstarch
    1/8 c. soy sauce lite (less salt)
    1 (8 oz.) can chunk pineapple and water to make 1 1/2 c. liquid
    1 Tbsp. vinegar
    2 Tbsp. brown sugar
    1/2 tsp. ginger
    1 1/2 c. brown rice
Preparation
    Brown chicken in nonstick skillet.
    Add peppers, cook and stir 1 to 2 minutes.
    Drain pineapple; add water to pineapple juice to make 1 1/2 cups liquid.
    Add liquid to skillet along with pineapple chunks, vinegar, sugar and spices.
    Bring to a boil. Meanwhile, prepare rice as directed on package.
    Serve over rice. Makes 6 servings.
