Vegetable And Cheese Stuffed Shells - cooking recipe
Ingredients

2 c. chopped broccoli
1 c. shredded carrots
1/2 c. chopped onion
1 clove garlic, chopped fine
2 Tbsp. vegetable oil
1 Tbsp. flour
1/2 c. milk
1 1/2 c. lite cottage cheese or lite Ricotta cheese
1/4 c. Parmesan cheese
salt and pepper to taste
8 to 10 cooked jumbo shells
Preparation

Cook vegetables in oil until tender.
Stir in flour and milk; cook until thickened.
Remove from heat.
Add cottage cheese, 2 tablespoons Parmesan cheese, salt and pepper.
Stuff shells, put in shallow baking dish.
Top with remaining Parmesan cheese. Bake, covered, at 325\u00b0 for 25 minutes.
