Rhubarb Coffee Cake(Freezes Well) - cooking recipe

Ingredients
    1 1/2 c. white sugar
    1/2 c. shortening
    1 egg
    2 c. flour
    1/2 tsp. salt
    1 tsp. soda
    1 c. buttermilk
    1 tsp. vanilla
    2 c. cut up rhubarb
Preparation
    Cream together shortening, sugar and egg.
    Add flour and salt. Mix soda with buttermilk and add flour alternately with buttermilk-soda mixture to creamed mixture.
    Blend well.
    Add vanilla and blend again.
    Fold in rhubarb.
    Pour into greased 9 x 13-inch pan and sprinkle topping over top and bake for 40 minutes at 350\u00b0.
