Curried Fresh Peaches - cooking recipe

Ingredients
    4 lg. peaches, peeled and sliced
    2/3 c. orange juice
    2 Tbsp. brown sugar
    1 Tbsp. cornstarch
    1/2 -1 tsp. curry powder
    1/2 tsp. ground ginger
    1 Tbsp. butter
    1/2 c. shredded coconut
Preparation
    Preheat oven to 350 degrees. Place peaches in 1 quart baking dish. In small sauce pan mix orange juice, brown sugar, cornstarch, curry powder and ginger. Stirring over medium-low heat, bring to a boil. Boil for 1 minute or until thickened. Stir in butter and pour over fruit. Sprinkle coconut on top. Bake 25-30 minutes or until coconut is lightly toasted and fruit is bubbly.
