Moussaka (Greek)(Party Dish) - cooking recipe

Ingredients
    4 medium eggplants
    salt
    2 lb. lean ground beef
    3 medium chopped onions
    1/2 c. butter or margarine
    1/2 c. dry red wine
    2 tsp. salt
    1/4 tsp. coarse black pepper
    1 tsp. oregano
    2 eggs, lightly beaten
    1 c. grated sharp Cheddar cheese
    1/2 c. soft bread crumbs
    2 (1 lb. 1 oz. each) cans plum tomatoes, drained
    6 Tbsp. flour
    3 c. milk
    salt and pepper
    dash of nutmeg
    4 egg yolks, lightly beaten
Preparation
    Peel eggplant, cut crosswise in 1/4-inch slices and sprinkle lightly with salt.
    Arrange in stacks.
    Place heavy plate on top. Let stand to drain.
