Chicken Or Turkey Tacos - cooking recipe

Ingredients
    1/4 c. defatted chicken or turkey stock or vegetable stock
    1 c. finely chopped onions
    3/4 c. finely chopped green or red bell pepper
    1/4 c. chopped fresh cilantro (Mexican or Chinese parsley)
    1 (4 oz.) can diced green chiles
    1 Tbsp. finely chopped seeded jalapeno chile
    2 c. diced, cooked chicken or turkey
    1 1/2 c. cooked brown rice
    2 tsp. soy sauce
    1 1/2 tsp. basil
    1 tsp. garlic powder
    dash of cayenne pepper
    12 corn tortillas
    raw vegetable garnishes (shredded lettuce, diced tomatoes and chopped green onions)
Preparation
    In a skillet bring the stock to a boil and add the onions and bell pepper.
    Saute the vegetables over medium heat until softened (about 5 to 7 minutes).
    Add the cilantro, chiles, chicken or turkey, rice and seasonings.
    Stir well, cover and cook over low heat for 4 to 5 minutes or until thoroughly heated.
    Heat the tortillas in the oven until hot but still pliable.
    Spoon about 1/3 cup of the filling into each warmed tortilla.
    Add raw vegetable garnishes.
    Fold tortilla in half and eat sandwich style.
    A dollop of nonfat yogurt, a few drops of bottled hot sauce or picante sauce and a little chopped fresh cilantro may be used as additional garnishes for extra flavor.
    Yields 12 tacos (about 4 to 6 servings).
