Chicken Breast And Mushroom In Madeira Sauce - cooking recipe

2 Tbsp. butter
3 whole chicken breasts, split and boned
1 tsp. salt
3/4 lb. medium size mushrooms
2 tsp. lemon juice
1 Tbsp. butter
2 Tbsp. shallots
1 Tbsp. flour
3/4 c. Madeira wine
3/4 c. heavy cream
3/4 c. shredded Swiss cheese
1/4 tsp. pepper
Preparation

Heat 2 tablespoons butter in large skillet, add chicken and brown over medium-high heat for about 10 minutes on each side. Sprinkle both sides with salt and pepper.
Transfer to a 12 x 8 x 2-inch baking dish.
Trim mushrooms, toss with lemon juice and set aside.
Add 1 tablespoon butter to skillet, stir in shallots and saute for 3 minutes.
Add mushrooms and cook for 5 minutes or until slightly brown, stirring often.
Blend in flour, pour in wine, then add cream.
Cook, stirring constantly, until thickened and bubbly.
Mix in 1/2 cup of cheese.
Spoon sauce over chicken, sprinkle with remaining cheese.
Bake at 400\u00b0 for 20 minutes or until chicken is bubbly and tender.
Serves 6.
