Pickle Relish - cooking recipe

Ingredients
    6 lb. ripe cukes
    3 small red peppers
    2 c. white sugar
    2 c. vinegar
    1 tsp. celery seed
    6 large onions
    3 green peppers
    1/4 c. salt
    2 c. brown sugar
    1 tsp. turmeric
    1 tsp. mustard seed
Preparation
    Pare cukes.
    Cut lengthwise; discard seeds and pulp.
    Dice cukes.
    Peel onions and dice.
    Cut peppers and dice.
    Combine vegetables.
    Stir in salt.
    Let stand overnight.
    Drain and rinse in cold water; drain again.
    Combine sugar, vinegar, turmeric, celery and mustard seed.
    Cook slowly until cukes are transparent, but not mushy.
    Seal in hot sterilized jars.
    Makes 3 quarts.
