Miriam'S Favorite Microwaved Shrimp And Rice - cooking recipe
Ingredients

3 Tbsp. unsalted butter
3 Tbsp. olive oil
1/2 c. chopped scallion or onion
2 celery stalks, chopped
2 c. rice (uncooked)
4 c. broth (chicken or clam)
3/4 lb. asparagus or string beans
1 lb. shrimp, peeled
3/4 c. fresh or frozen peas
1/2 c. Parmesan cheese
1/2 c. fresh parsley, chopped
Preparation

Heat butter and oil in a 13 x 9-inch glass dish, uncovered, at full heat in microwave for 3 minutes.
Add scallions, celery, parsley and rice.
Stir.
Cook at full power 4 minutes.
Stir in broth.
Cook at full power for 12 minutes.
Add remaining vegetables and cook 12 more minutes.
Let sit for 10 minutes with loose cover.
Sprinkle with cheese and eat.
