Mamita'S Arroz Con Pollo - cooking recipe
Ingredients

1 whole cut up chicken (liver and gizzards removed)
4 c. crushed fresh tomatoes
6 to 8 c. cooked yellow rice (prepared ahead)
3/4 c. crushed green olives, pitted
1/2 c. sauteed yellow onions
pinch of curry
1 Tbsp. saffron
1 garlic clove, crushed
1/2 c. capers
1 c. frozen peas
Preparation

Brown chicken in heavy casserole in oil.
Add saffron (salt and pepper to taste), curry, onions and garlic.
Place in 325\u00b0 oven. Bake until chicken is done, about an hour.
Add in rice, crushed tomatoes, olives, capers and peas.
Serve when heated through. Great for a make ahead dish to serve the next day.
