Vegetable Corn Bread - cooking recipe

Ingredients
    1/2 c. finely chopped celery
    1/2 c. finely chopped onion
    1/2 c. finely chopped bell pepper
    1 c. flour
    3/4 c. corn meal
    2 Tbsp. sugar
    1 Tbsp. baking powder
    1/2 tsp. salt (optional)
    2 egg whites
    3/4 c. skim milk
    3 Tbsp. vegetable oil or 3 Tbsp. applesauce for oil-free
Preparation
    Saute vegetables in medium sized cast-iron skillet that has been sprayed with vegetable cooking spray.
    Combine dry ingredients in large bowl.
    Combine egg whites, milk and oil/applesauce and stir into dry ingredients.
    Add sauteed vegetables.
    Spread in skillet.
    Bake 20 minutes at 425\u00b0.
