Texas Pecan Cake - cooking recipe

Ingredients
    3 c. sugar
    1 lb. butter
    7 eggs, separated
    5 c. flour
    1 oz. lemon extract
    1 tsp. soda, dissolved in 1/4 c. warm grape juice
    4 c. chopped pecans
    1 lb. candied pineapple, chopped
    1 lb. candied red cherries, chopped
    1/2 lb. green cherries, chopped
Preparation
    Cream the butter and sugar well. Add beaten egg yolks. Combine nuts and fruits with some of the flour and stir until coated.
    Add flour, a little at a time, to creamed mixture. Add extract and grape juice. Add fruit and nuts; fold in.
    Beat egg whites until stiff and fold in. Bake in well-greased tube pan at 250\u00b0 for 4 hours or until done.
