Chinese Fried Rice(6 Servings) - cooking recipe

Ingredients
    3 c. leftover rice
    4 minced scallions
    1/2 tsp. salt
    1/2 c. diced cooked chicken (optional)
    3 eggs
    1 1/2 Tbsp. soy sauce
    1/4 c. minced cilantro leaves
    1/4 c. vegetable oil
Preparation
    Heat oil in heavy skillet; toss in rice and heat until hot and golden.
    Add scallions, salt and chicken; mix well.
    Push rice to sides of pan and break 3 eggs into hollow.
    Stir until lightly scrambled, then stir together with rice mixture.
    Add soy sauce and cilantro; stir.
    Serve.
