Grandma'S Potato Cakes(Patrick'S Favorite) - cooking recipe

Ingredients
    2 to 3 c. leftover mashed potatoes
    1 small onion, chopped very fine
    1 egg
    salt and pepper to suit your taste
    2 Tbsp. flour
    grated cheese (if desired)
Preparation
    Combine all of the ingredients in a mixing bowl and mix well. Take about 2 tablespoons of mixture at a time and form into a patty.
    Dust each side with a little flour.
    Fry in a little vegetable oil until brown on both sides.
