Holiday Grape Dressing - cooking recipe

Ingredients
    1 c. brown rice
    2 Tbsp. olive oil
    1/2 c. chopped onion
    1/2 c. chopped celery
    1/2 c. chopped white mushrooms
    2 c. chicken broth
    1/2 tsp. thyme
    1/2 tsp. crushed oregano
    1/8 tsp. coarsely ground pepper
    2 c. grapes
    2 Tbsp. chopped parsley
    1/2 c. chopped almonds or Macadamia nuts
Preparation
    Brown rice in oil; remove from skillet and set aside.
    Cook and stir onions and celery in same skillet.
    Stir in mushrooms, broth, rice and seasonings.
    Simmer, covered, 25 to 30 minutes or until rice is cooked and liquid is absorbed.
    Stir in grapes, nuts and parsley; cook about 2 minutes or until grapes are thoroughly heated.
