Mexican Corn Bread - cooking recipe

Ingredients
    1 c. corn (cream-style)
    1 c. chopped onion
    1 c. grated cheese (Cheddar)
    1/2 c. buttermilk
    1/2 c. oil
    2 eggs
    1 to 3 jalapeno peppers, chopped fine
    1 1/2 c. self-rising corn meal
Preparation
    Grease an 11-inch iron skillet with Crisco solid shortening. Shake 1 tablespoon meal around on bottom. Put corn bread mix in the cold skillet and bake 48 minutes in a preheated 400\u00b0 oven.
