Eggplant Parmesan - cooking recipe
Ingredients

1 medium size onion, chopped
2 cloves garlic, chopped
2 Tbsp. oil or margarine
1 large eggplant, peeled
1 Tbsp. oregano
1/2 lb. Ricotta cheese
1/2 c. bread crumbs or enough to soak up liquid
1 Tbsp. grated pecorino Romano cheese
1/2 lb. grated Mozzarella cheese
tomato sauce (preferably homemade, but jar will do)
1 tsp. salt
1/4 tsp. pepper
1/4 c. water
1 tsp. basil
1 egg
