Zucchini Soup - cooking recipe
Ingredients

1 or 2 c. shredded zucchini and/or yellow summer squash
1/2 c. chopped onion
1/2 c. chopped green peppers
1/2 c. chopped celery, particularly the leaves
1 14 1/2 oz. can tomatoes
1 15 oz. can tomato sauce
1 lb. sweet Italian sausage or hamburg
1 8 oz. can mushrooms, or use fresh
1 can of whole kernel corn
2 chicken bouillon cubes dissolved in 1 1/2 cups of hot water
1/2 tsp. basil
1/2 tsp. oregano
salt and pepper to taste
Preparation

Place all items in large soup pot and simmer for 1 hour. Granular chicken bouillon can be substituted for cubes or you can use can of chicken stock and eliminate the hot water.
