Eggplant - cooking recipe

Ingredients
    1 eggplant
    2 well beaten eggs
    1 c. milk
    1 small onion, minced
    salt if needed
    pepper
    1 c. bread crumbs
Preparation
    Peel eggplant and cook in salted water.
    Mash.
    Add other ingredients. Mix and let stand awhile. Then bake 20 to 30 minutes at 350\u00b0. Sprinkle with cheese while hot.
