Frittata Hors D'Oeuvres - cooking recipe

Ingredients
    1/2 (10 oz.) pkg. frozen chopped spinach
    1 c. Ricotta cheese
    3/4 c. grated Parmesan cheese
    2/3 c. chopped mushrooms
    2 Tbsp. chopped onion
    1/2 tsp. oregano
    1/4 tsp. salt
    1 egg
    sliced pepperoni sausage (optional)
    sour cream
Preparation
    Thaw spinach and squeeze dry.
    Mix with Ricotta, Parmesan, mushrooms, onion, oregano, salt and egg.
    Lightly butter 24 (1-inch) muffin cups.
    Place a slice of pepperoni in the bottom of each if you like.
    Spoon cheese mixture into cups.
