Lemon-Raspberry Muffins - cooking recipe

2 c. flour
1 Tbsp. baking powder
1/2 tsp. salt
3/4 c. sugar
1 c. fresh raspberries
2 large eggs, beaten
1 c. half and half
1/2 c. vegetable oil
1 tsp. lemon extract
Preparation

Combine first 5 ingredients in a large bowl; make a well in center of mixture.
Combine eggs and next 3 ingredients; add to dry ingredients and stir just until moistened.
Place paper baking cups in muffin pan and coat with cooking spray.
Spoon batter into paper cups, filling 3/4 full.
Bake 20 to 22 minutes at 425\u00b0. Yields 1 1/2 dozen.
