Carrot Bran Muffins - cooking recipe

1 1/2 c. whole wheat flour
1 tsp. salt
1 1/2 tsp. baking soda
1 1/2 c. bran
1/2 tsp. nutmeg
1 1/2 c. milk
2 tsp. vinegar
1/4 c. Black Strap molasses
1/3 c. honey
1 c. grated carrots
2 eggs
1/4 c. oil
1/2 c. raisins and/or chopped pecans
Preparation

Mix dry ingredients in one bowl and wet; including carrots, raisins and nuts in another bowl.
Combine the two mixtures and blend only until dry ingredients are moistened.
Do not overbeat. Fill buttered muffin tins 2/3 full.
Bake at 375\u00b0 for 20 minutes. Yields:
20 to 24 muffins.
