Poor Man'S Caviar - cooking recipe

Ingredients
    1 large eggplant
    1 c. chopped tomatoes
    1/2 c. finely chopped onion
    1/2 c. finely chopped celery
    1/2 c. finely chopped green pepper
    1 to 2 Tbsp. olive oil
    salt to taste
Preparation
    Bake whole eggplant in 400\u00b0 oven for one hour until it looks collapsed.
    Then skin eggplant and mash with fork.
    Lightly saute onion, celery, green pepper and tomatoes.
    Add this to eggplant pulp and chill for two or three hours.
    Yields about 2 1/2 cups.
