Sweet Pepper Burritos With Guacamole - cooking recipe
Ingredients

1 tsp. ground cumin
1 tsp. chili powder
1/4 c. grated red onion
2 tsp. lime juice
1/2 c. chicken broth
3 c. shredded romaine lettuce
4 flour tortillas, warmed
1/2 ripe avocado, lightly mashed
1/2 tsp. freshly ground black pepper
1/4 c. snipped fresh cilantro
2 sweet green peppers, cut into strips
2 sweet red peppers, cut into strips
1/2 c. lemon juice
1 c. chopped tomatoes
2 tsp. grated lime peel
1 c. shredded jicama
Preparation

In a medium bowl, mix the peppers, lemon juice, cilantro, cumin, chili powder and black pepper.
Let stand for 30 minutes. Meanwhile, in another medium bowl, mix the tomatoes, avocado, onions, lime peel and juice.
Cover and refrigerate the guacamole until needed.
Place the tortillas on individual plates.
Divide the pepper mixture evenly with the lettuce and jicama and roll up the tortilla to enclose the filling.
Serve with the guacamole. Serves 4.
