Ingredients

2 or 3 large apples (any variety, firm textured will do)
1 envelope (any brand) pancake batter mix (use less liquid than called for and make a thick batter)
Preparation

Core and peel apples and slice into rings.
Preheat cooking oil 1/2-inch deep in frying pan.
Dip apple rings in batter and fry until golden brown, each side turning once.
Remove and drain on paper towel.
Immediately sprinkle lavishly with sugar and cinnamon mixture.
Serve hot.
