Pumpkin Nut Roll - cooking recipe

Ingredients
    3 eggs
    1 c. sugar
    1 tsp. lemon juice
    2 tsp. cinnamon
    1/2 tsp. nutmeg
    2/3 c. pumpkin
    2/3 c. flour
    1 tsp. baking powder
    1/2 tsp. salt
    1 tsp. ginger
    1 c. chopped nuts
    powdered sugar
Preparation
    Beat eggs on high for 3 minutes.
    Gradually add sugar.
    Stir in pumpkin.
    In another bowl, mix rest of dry ingredients (not nuts).
    Gradually fold in pumpkin mixture.
    Spread into greased and floured cookie sheet.
    Top with chopped nuts.
    Bake at 375\u00b0 for 15 minutes.
    Turn out on dish towel; sprinkle with powdered sugar.
    Roll up in towel.
    Let set for 1 hour.
    Unroll; fill with Cream Cheese Filling.
    Re-roll and refrigerate.
