Ingredients

1 c. milk
2 eggs
1 Tbsp. sugar
1 Tbsp. salad oil
1 c. unbleached flour
2 tsp. baking powder
1/4 tsp. cinnamon
1 apple, cut in eighths
Preparation

Put all ingredients, except apple, into blender.
Cover and process at low until blended.
Stop and add apple; cover and process at high only until apple is finely grated.
Pour into a hot, well-greased griddle.
Yields 10 to 12 pancakes.
