Veal Chops With Tarragon - cooking recipe

Ingredients
    4 boned veal rib chops with \"tail\" attached
    freshly ground pepper
    3 Tbsp. unsalted butter
    1 large clove garlic
    3/4 c. chicken stock
    1/4 c. brandy (preferably cognac)
    1 1/2 tsp. chopped fresh tarragon or 1/2 tsp. dried
    1/2 c. heavy cream
    salt
Preparation
    In small saucepan, melt butter over very low heat.
    Turn off heat and skim off foam.
    Carefully pour off golden clarified butter and reserve.
    Discard residue.
