Ingredients

1 1/2 c. pancake mix
1/2 c. quick oatmeal
1/2 Tbsp. cinnamon
1 1/2 c. water (more or less)
1 medium apple, peeled, cored and chopped
Preparation

Combine the first 3 ingredients.
Slowly add the water and gently blend in the apples.
FOR FLUFFY PANCAKES DO NOT OVERMIX. Pour onto heated griddle and flip when side is covered in bubbles. Turn only once.
Makes 12 to 14 pancakes.
