Welsh Cakes - cooking recipe
Ingredients

16 oz. self-rising flour (can use plain flour, but add 2 tsp. baking powder)
8 oz. margarine
6 oz. caster sugar
6 oz. currants
1 large or 2 small eggs
Preparation

Rub margarine (mix) into flour.
Add caster sugar.
Add currants.
Beat eggs and mix into dry ingredients.
The mixture should be easy to roll out to approximately 1/4-inch thick.
Add another egg or a little milk if mixture is too dry.
Cut into rounds and bake on a griddle or frying pan.
When slightly browned, turn and bake on the other side.
