Ingredients

4 egg whites
1/2 tsp. cream of tartar
pinch of salt
1 c. sugar
1/4 tsp. anise flavoring
red and green colored sugars
Preparation

Heat the oven to 250\u00b0.
Line baking sheets with foil.
With an electric mixer set at medium speed, beat the egg whites with the cream of tartar and salt until they hold soft peaks.
Increase speed to high and beat in the sugar gradually.
Continue beating until the whites hold stiff peaks.
Beat in the anise.
Drop by heaping teaspoonfuls about 2 inches apart onto the baking sheets. Sprinkle with colored sugar.
Bake until firm to the touch, 40 to 45 minutes.
Centers will still be soft.
Let stand about 30 seconds on baking sheets before removing.
