Chicken Saltimbocca(Italian For "Jump In Mouth Quickly") - cooking recipe

Ingredients
    6 boned chicken breasts
    6 thin slices boiled ham
    6 slices Mozzarella cheese, halved
    1 medium tomato, seeded and chopped
    1/2 tsp. dried sage, crushed
    1/3 c. dry bread crumbs
    2 Tbsp. grated Parmesan cheese
    2 Tbsp. snipped parsley
    4 Tbsp. butter or margarine, melted
Preparation
    Place chicken on cutting board.
    Place a piece of clear plastic wrap over chicken.
    Working from the center out, pound lightly with meat mallet to 5 x 5-inches.
    Remove wrap.
    Place a ham slice and half slice of Mozzarella cheese on each cutlet, cutting to fit. Top with some tomato and a dash of sage.
    Tuck or fold in sides. Roll up jelly roll style, pressing to seal well.
    Combine bread crumbs, Parmesan cheese and parsley.
    Dip chicken in butter or margarine, then roll in crumbs.
    Place in shallow baking dish. Bake in a 350\u00b0 oven for 40 to 45 minutes.
    May be frozen after cooking.
    Serves 6.
