Zucchini Casserole - cooking recipe
Ingredients

6 c. zucchini, sliced and quartered
1/4 c. onion, chopped
1 c. carrots, grated
1 can cream of chicken soup
1 c. sour cream
1 pkg. Pepperidge Farm stuffing mix
1 stick margarine, melted
Preparation

Cook zucchini and onion 10 minutes.
Drain.
Combine soup and sour cream with zucchini.
Add carrots and season with salt and pepper.
Add 2 tablespoons margarine.
Mix stuffing with melted margarine.
Reserve 1 cup crumbs.
Combine rest of crumbs in casserole.
Place reserved crumbs on top.
Bake at 350\u00b0 for 30 to 40 minutes.
