Ingredients

6 medium potatoes, peeled
1 medium onion, chopped
2 eggs, beaten
1 tsp. salt
1/4 tsp. pepper
1/4 c. vegetable oil
Preparation

Shred or grate potatoes.
Combine onion, eggs, salt and pepper in large mixing bowl.
Pat dry potatoes with paper towels; add to onion mixture and mix thoroughly.
Heat oil in skillet over medium heat.
Drop potato mixture by rounded tablespoonfuls into oil. Cook until crisp and golden on both sides.
Serve with applesauce and/or sour cream.
