No Fat Zucchini Muffins - cooking recipe

Ingredients
    3/4 c. whole wheat flour
    3/4 c. oatmeal
    1/4 c. sugar
    1/4 c. brown sugar
    1/2 tsp. soda
    1/2 tsp. salt
    1/4 tsp. baking powder
    1 egg or 2 egg whites
    1 pkg. Butter Buds
    1 Tbsp. vanilla
    1 1/2 c. grated zucchini
    grated rind of 1 lemon
Preparation
    Heat oven to 400\u00b0.
    In large bowl, mix flour, oats, sugars, soda, salt and baking powder until blended.
    In another bowl, beat egg, Butter Buds and 1/2 cup warm water and vanilla.
    Mix all together.
    Add zucchini and lemon peel.
    Spray muffin pan with Pam.
    Bake 20 minutes or until brown.
    Cool. Roll in cinnamon sugar.
    Makes 11 or 12 regular size muffins.
