Eggplant Lasagna - cooking recipe

Ingredients
    1 large eggplant
    2 c. tomato sauce
    1 c. cottage cheese
    1/2 c. chopped parsley
    4 oz. shredded Mozzarella cheese
Preparation
    Trim ends of eggplant and slice eggplant 1/4 inch thick. Brush with a little olive oil and place under broiler about 5 minutes per side.
    Heat oven to 350\u00b0.
    Layer ingredients in dish, a little sauce, eggplant cottage cheese, sauce, eggplant, both cheeses, sauce and top with Mozzarella cheese.
    Bake 20 minutes or until it bubbles.
