Tofu Chili - cooking recipe

Ingredients
    1 Tbsp. oil
    1 medium onion, chopped
    2 cloves garlic, minced
    1 c. frozen tofu, thawed, mashed, drained and squeezed (approximately 1/2 block Tomori or Oshiro)
    1 tsp. hot chili powder or more to taste
    1 tsp. cumin
    1 tsp. oregano
    1 small can tomato paste (no salt added)
    1 Tbsp. wine vinegar
    1 can kidney beans
    1/2 c. water
    Parmesan cheese, grated
Preparation
    Heat oil and saute onion until tender.
    Add garlic, tofu and seasoning.
    Stir in tomato paste and vinegar.
    Cook over low heat for a few minutes.
    Add beans and water.
    Serve with Parmesan cheese.
    Vegetables such as peppers, zucchini, corn or cabbage may be added.
    Serves 4 to 5.
