Boiled Raisin Cake - cooking recipe

3 c. seedless raisins
3 c. water
2 c. sifted enriched flour
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1/2 c. butter or oleo
1 1/2 c. sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. nuts (optional)
Preparation

Cover raisins with water; bring to a boil and simmer 30 minutes. Drain raisins, reserving 1 cup liquid.
Cool raisins and liquid thoroughly. Sift together flour, soda, salt and spice. Cream together shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
Fold raisins into batter. Blend in flour mixture alternately with raisin liquid, beating well after each addition. Bake at 350\u00b0 for 60 to 70 minutes in a 9 x 13-inch pan.
Top cake with icing (confectioners sugar, cream cheese and lemon flavoring).
