English Muffins - cooking recipe

Ingredients
    1 c. scalded milk
    1/2 tsp. salt
    2 Tbsp. sugar
    3 Tbsp. oil or shortening
    1 pkg. dry yeast
    1/4 c. warm water
    1 egg, beaten
    3 c. flour
Preparation
    Mix milk, salt, sugar and shortening.
    Cool to lukewarm. Dissolve yeast in warm water; add beaten egg.
    Blend with lukewarm mixture.
    Add flour and knead until smooth on a floured board. Let rise in bowl until doubled.
    Knead.
    Rest 1 minute.
    Roll 1/4-inch thick.
    Cut into muffins.
    Place on a cookie sheet covered with 1/4 cup cornmeal; top with cornmeal.
    Cover and let rise until doubled.
    Cook on medium hot ungreased griddle for 8 to 12 minutes on each side.
    Cool on rack.
