Ham Fried Rice - cooking recipe
Ingredients

4 c. cold boiled rice
2 eggs
1/2 c. diced cooked ham
1/2 c. chopped scallions
2 Tbsp. soy sauce
1/2 tsp. sugar
4 Tbsp. peanut or corn oil
Preparation

Beat eggs; slightly scramble in 1 tablespoon oil.
Set aside for later use.
In heavy frying pan over high flame, heat 3 tablespoons oil.
Add scallions; stir a few times.
Add rice; stir quickly until rice is coated with oil.
Mix together the soy sauce and sugar; stir into rice and mix well.
Add ham and eggs, breaking eggs into little pieces.
Serves 4.
