Enchiladas - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1/4 c. diced onions
    1 Tbsp. cumin hot sauce
    1 lb. roast beef, sliced thin
    2 c. dirty rice
    2 c. shredded sharp cheese, set 1/2 aside
    1 c. tomato sauce
    8 large tortilla shells
Preparation
    Saute onion in hot oil until they are translucent. Add garlic, hot sauce and beef. Heat through. Salt and pepper. Heat oven to 350. Take one shell, place 1/8 of mixture on shell, 1/8 of dirty rice and 1/8 cheese. Roll, tuck in ends and place seam side down in a 9x13 casserole dish. Cover with tomato sauce. Sprinkle with remaining cheese. Bake 20 to 30 minutes.
