Ingredients

1/2 c. shortening
1 1/4 c. sugar
2 egg yolks
1 tsp. lemon extract
1/2 tsp. vanilla extract
1 1/2 c. shredded carrots
1 1/2 c. flour
3 Tbsp. baking powder
3/4 tsp. salt
1/4 c. milk
2 egg whites
Sunshine Sauce
Preparation

Cream shortening and sugar in mixer bowl until light and fluffy.
Beat in egg yolks, flavorings and carrots.
Mix flour, baking powder and salt in bowl.
Add to carrot mixture alternately with milk, mixing well after each addition.
Beat egg whites in bowl until stiff.
Fold into batter gently.
Pour into greased 9-inch square baking dish.
Bake at 350\u00b0 for 50 to 55 minutes or until lightly browned.
Top warm pudding with Sunshine Sauce. Yield:
12 servings.
