Eggplant And Shrimp (Or Oysters)(Servings: 6) - cooking recipe

Ingredients
    1 large eggplant and an equal amount yellow squash
    1 c. bread crumbs
    1 Tbsp. butter
    1 lb. shrimp or oysters
    2 onions, diced
    1 pod garlic
    1 green pepper
    2 c. Cheddar cheese, grated
    parsley
    salt and pepper
Preparation
    Cut eggplant in large pieces after soaking in water to remove bitterness.
    Mix with above ingredients in 3-inch deep baking dish.
    Cover ingredients with more of the grated Cheddar cheese. Bake at 350\u00b0 until hot completely through.
    Oysters may be used instead of shrimp.
