Pineapple Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. salad oil
    2 c. sugar
    2 tsp. vanilla
    1 c. well drained, crushed pineapple
    3 c. flour
    2 tsp. baking soda
    1 tsp. salt
    1/2 tsp. baking powder
    1 1/2 tsp. cinnamon
    3/4 tsp. nutmeg
    1 c. chopped nuts
    1 c. raisins (optional)
Preparation
    Beat eggs, oil, sugar and vanilla until thick and foamy.
    Stir in pineapple and zucchini. Combine remaining ingredients, stirring gently (just enough to blend).
    Pour into two greased and floured loaf pans.
    Bake at 350\u00b0 for about 1 hour (test center with toothpick).
    Cool on racks.
    Freezes very well.
