Pinto Beans(Frijoles) - cooking recipe
Ingredients

2 c. raw pinto beans
1 qt. cold water
2 Tbsp. bacon drippings or shortening
1 Tbsp. salt
Preparation

Clean raw beans (make sure there are no rocks with them). Rinse thoroughly with cool water several times.
Drain and place beans in stainless 2-quart pan; add 1 quart cold water and bacon drippings or shortening.
Cook, covered, over low to medium heat 2 to 3 hours; add water as necessary to keep beans from drying, during last hour of cooking, add salt.
Makes 1 to 1 1/2 quarts beans.
