Creole Beans And Rice - cooking recipe
Ingredients

1 lb. dried red beans
1/2 lb. salt pork
3 c. chopped onions
1 bunch green chopped onions
1 c. chopped, fresh parsley
1 c. chopped green pepper
2 cloves garlic, pressed
1 Tbsp. salt
1 tsp. red pepper
3 dashes hot sauce
1 Tbsp. Worcestershire sauce
1 (8 oz.) can tomato sauce
1/4 tsp. dried whole oregano
1/4 tsp. dried whole thyme
2 lb. smoked sausage, cut into bite size pieces
hot, cooked rice
Preparation

Sort and wash beans.
Place in a Dutch oven.
Cover with water and soak overnight.
Drain beans.
Add pork and cover with water. Cover and cook 45 minutes.
Add all remaining ingredients except sausage and rice.
Cover and cook over low heat 1 hour, stirring occasionally.
Add sausage; cook, uncovered, over low heat for 45 minutes, stirring occasionally.
Serve over rice.
Yields about 12 servings.
