New Orleans Red Beans And Rice - cooking recipe
Ingredients

1 large yellow onion, peeled and chopped
3 (19 oz.) cans red kidney beans packed in water, drained
1/2 lb. smoked pork sausage, cut in 1/2-inch pieces
2 c. water
1 tsp. garlic, peeled and chopped
4 bay leaves
1 tsp. black pepper
1/4 tsp. cayenne
1 tsp. salt
3 to 5 c. cooked rice
Preparation

In Dutch oven, mix together onion, kidney beans, sausage, water, garlic, bay leaves, pepper, cayenne and salt.
Bring this to a boil over high heat, then reduce heat to low; simmer for 30 to 40 minutes until beans start to fall apart.
Stir every 10 minutes.
Remove bay leaf and serve over rice.
Serves 4.
